This lot is a varietal selection Java from the Valladares’ Buenos Aires farm. While the java may seem like a relatively new player onto the scene, this variety has a long history - it was originally brought to the island of Java by the Dutch from Ethiopia. In fact, it was initially thought to be a selection of Típica - which would not be surprising considering the bean’s attractive long and slender shape. however, genetic mapping has shown that it is a selection of another Ethiopian landrace called Abyssinia. The cultivar has a few unique characteristics that have shown promise in the Americas, and a few even believe it could be one of Nicaragua’s calling cards soon enough.
The plants are attractive at first sight - long and low branches that are evenly and generously arranged with broad spacing between the leaf nodes. The planting, as a result, is widely and abundantly spaced to allow the plants to develop properly. They tend to favor the median altitudes we have in the region, and are likely to flounder in extreme altitude and colder microclimates.
This year's lot is fully washed - on the one hand, the harvest conditions were such that successfully managing humidity proved to be difficult with the weather and for that reason, it Was deemed that a full wash was the best route to ensure the customary level of quality. On the other hand, the coffees have proven to be bodily and sweet this year - making for more charm and balance than we usually see in Java, while still holding on to those ethereal and delicate notes. Bergamot, darjeeling, blossoms caramel and toffee are all present in the cup.
