NOT TOO FAR FROM THE BUENOS AIRES NAMESAKE FARM, EL SUYATAL IS ONE NARROW SOUTH-FACING SLOPE PLANTED TO THE CATURRA VARIETY WITH SOME BOURBON AND CATUAÍ VARIETIES SPRINKLED THROUGHOUT. THE FARM TOPS OUT AT NEARLY 1550 MASL - A UNIQUELY HIGH ALTITUDE FOR THE MORE ARID AND SANDY SOILS OF THIS PARTICULAR MICRO REGION.
AT CAFÉ INTEGRAL, WE HAVE ALWAYS LOVED THE COFFEES PRODUCED BY THIS FARM FOR THEIR BRIGHT CHARACTER, ALWAYS BRIMMING WITH BERRIES AND STONE FRUITS AS WELL AS SOME MORE TROPICAL NOTES. NONETHELESS, THE COFFEE ALWAYS FILLS OUT WITH NOTES OF BROWN BUTTER, TOFFEE, AND A NUTTY ALMOST HONEY WHEAT-LIKE FINISH. AND WHILE THE TERROIRS OF DIPILTO ARE VARIED, WE RARELY GET THE OPPORTUNITY TO PRESENT THIS DRYER, PINE-LADEN FOREST, WITH ITS SANDY AND ACIDIC SOILS. FOR US, THE COFFEES ARE THE IDEAL ONES FOR THE COOLER FALL WEATHER - CRISP DAYS THAT REWARD SUBTLE BUT WELL-DEFINED AROMATICS.
