For Fredy Blandino Romero, it all began when he was a child, inspired by his parents and grandparents who had always worked in coffee farming. Their example fueled Fredy’s desire to work the land and develop his own small coffee farm, acquired six years ago.
Finca Los Congos is located in the municipality of Mozonte, in the department of Nueva Segovia, at an elevation of 1,520 meters above sea level. It is surrounded by a beautiful and welcoming microclimate, as well as a rich diversity of flora and fauna. The farm consists of four manzanas planted with coffee and two manzanas of natural forest.
The coffee variety planted is pink bourbon. The ripest and best-quality cherries are picked and fermented in a prolonged, carefully controlled anaerobic environment. This process has allowed Fredy to develop very complex and fruity flavors that distinguish the coffee from the variety’s typical profile, while maintaining exceptional cleanliness and sweetness.
