ABOUT THE FARM:

Cafetalera Buenos Aires is a family owned operation with sons Luis and Olman handling the day to day operations. They produce coffee on several different farms, all in Dipilto, Nueva Segovia. They have a separate wet-processing facility (beneficio humedo) as well as a dry mill (beneficio seco). In the past year they have begun working with smaller producers offering them both wet and dry processing at their facilities. They have an exceptional lab which is relentless in their work towards quality, consistency and discovery.

One of their farms is located on the eastern side (western facing) of the Dipilto valley - in this case we are sitting in an ancient volcanic lake bed - hence “La Laguna.” Here we have volcanic soils with steep slopes that drain well, but also retain moisture due to the substantial amount of clay in the soils and shade planted amongst the coffee. The result is a coffee with a focused red-fruit and citrus profile that is unique to the area.

The Valladares farm is planted with mostly Caturra varieties with a few interspersed Catuaí and Bourbon trees in the mix. The coffees are picked carefully and run through a washed process twice daily, just down the hill from the farm’s weigh station and canteen. The coffees are dense and bring classic bright fruit aromas of cherries, orange peel, and subtle sweet aromatics of caramel and honey. They have a nice core of roasted almonds and a backbone of dark chocolate to boot. These coffees are the emblem of a classic Dipilto profile and offer a balanced and dynamic beverage for all to enjoy.
